CCQ's "Island Potato Salad"... If you make this Potato salad, prepare yourself to be t

This is a recipe I've guarded near and dear to my heart, now its yours, Enjoy.

Potato Salad at any Caribbean family gathering is definitely that one dish that only one special person can make perfectly, and amongst family and friends "I'm that designated person". Now you can be that person in your family with my delicious "Creole Caribbean Queen Potato Salad" .. Enjoy!

Prep Time: 15 min

Cook time 20-30 min

Serves 6-8

Ingredients:

* 3 lbs Russet Potatoes

* 3 eggs (Optional)

* 1 1/2 cup of mayonnaise

* 1/3 cup sweet relish

* 2 Tbsp mustard

* 1/3 cup sweet red bell peppers (finely diced)

* 1/3 cup sweet green bell peppers (finely diced)

* 1/3 cup finely diced onions

SEASON MIX

In a small bowl mix together 1/4 tsp Black Pepper 1/4 tsp Salt 1/2 tbsp Paprika 1 tsp All Purpose/Complete seasoning

Once mixed, set aside.

Directions:

Boil potatoes and eggs together in a large pot ( removing eggs after 10 and put into a small bowl with cold water) leave potatoes to boil for an additional 15 to 20 minutes until fork tender.

While potatoes are boiling prepare your mixture.. In a large bowl combine mayonnaise, mustard, sweet relish, diced red bell peppers, diced green bell peppers, diced onions and season mixture. Refrigerate until you're ready to use it.

Remove boiled eggs from shell and finely chop into small pieces. Once potatoes are completely cooked, remove potatoes from stove, dispose of the hot water and pour cold water into pot.. let potatoes cool for 5 minutes until they're warm to the touch. Then peel and dice potatoes in a separate large bowl. Use a fork or potato masher to mash 1/3 of the potatoes while leaving the other 2/3 in diced pieces.

Then pour potatoes into bowl with mayonnaise mixture along with diced eggs and fold together until well mix. After mixing scoop "Island Potato Salad" into your clean serving dish , sprinkle with reserved 1/4 season mix and top with finely chopped scallions. Serve! ... the secret to my potato salad is definitely the sweet relish and my secret spice season mixture (which I guess isn't a secret anymore) ... Enjoy!
