Saturday mornings will never be the same...try my "Haitian Cake Buttered Pancakes with Warm Spi


At every Haitian Birthday party as soon as you walk into the room you zoom directly into the cake. You're hoping to get even the smallest slither of the moist, delicious, rich and decadent cake. Now you can enjoy that delicious taste every morning. Surprise your hubby or beautiful wife by making the most delicious pancakes for breakfast....or treat the kids next Saturday to pancakes with a twist. Making my Haitian Cake Buttered Pancakes topped with my warm buttered spiced syrup is a treat that will have your family asking for MORE. The taste of the made from scratch pancakes are reminiscent of Haiti's traditional butter cake.. Enjoy! Love, C.C.Q.

Makes 12-14 large pancakes (1/3 cup scoops)

Serves 4-5

Pancake

Dry Ingredients

2 cups all purpose flour

1 & 1/2 teaspoon cornmeal

3/4 cup granulated sugar

2 tablespoons baking powder

1 teaspoon baking soda

1 & 1/2 teaspoon freshly grated nutmeg

1 & 1/2 teaspoon Kay man man warm spice mix ( sold exclusively at www.CreoleCaribbeanQueen.com)

1/2 teaspoon salt

Wet Ingredients

3 eggs, whipped

1 cup evaporated milk

1/4 cup of water

2 tablespoons Essence De Noyau (The Essence De Noyau is a very important ingredient, do not omit)

1 tbsp pure vanilla extract

1/2 teaspoon fresh lime zest

1 stick melted butter, cooled to room temperature

  1. In a medium bowl whisk together flour, fine cornmeal, sugar, baking soda, baking powder, nutmeg, Kay man man warm spice and salt. Set aside.

  2. In a separate large mixing bowl whisk together eggs. Then add evaporated milk, water, essence de noyau, vanilla extract and lime zest. Whisk until well blended.

  3. Slowly pour dry flour ingredients into wet ingredients while whisking. Batter will be thick.

  4. Add melted butter last. Whisk butter into batter until ingredients are well combined.

  5. Pre-heat your flat top non-stick griddle to a medium/ low Heat. Pour 1/3 cup size scoops of batter onto heated non-stick griddle, use the back of a wet spoon to evenly spread pancakes batter into a even round circle.

  6. Cook for about 1 & 1/2 to 2 minutes per side or until done. ( it is important to use a good quality non-stick smooth griddle pan when making your pancakes, it yields a much more even, beautiful, smooth brown pancake surface .)

  7. Serve delicious golden pancakes topped with warm Spice buttered syrup.

Warm Spiced Buttered Syrup

Ingredients

1 cup regular pancake syrup

1/4 cup water

1 tablespoon Essence De Noyau

Pinch of salt

3 star anise

2 Cinnamon sticks

1 tablespoon butter

1/2 teaspoon fresh lime zest

1/2 teaspoon Kay Manman warm spice blend

1/2 teaspoon freshly grated nutmeg

In a medium saucepan combine syrup, water, Essence De Noyau, salt, star anise, cinnamon sticks, butter, lime zest, Kay Man Man warm spice mix and nutmeg. Bring to a low simmer/gentle boil for 2 minutes. Remove from stove carefully because syrup will be extremely hot. Allow syrup to come to a warm temperature that is safe for children then pour warm syrup over freshly made pancakes. Keep syrup warm until ready to pour over pancakes (be very careful when

handling syrup, it will be extremely hot)

If syrup stiffens, simply pop in the microwave at 10 second increments until it has loosened and is

pour-able.
