🌺1 & 1/2 Green Plantain (Peeled & Cut into small cubes)
🌺5 Cups of Water
2 tsp of #CCQ Kay Manman Spice mix (Available in the Shop section of the website.)
3 cinnamon sticks
5 star anise
1/2 freshly grated nutmeg(Only grade 1/2 of the nutmeg for this recipe)
🌺1/2 Teaspoon Salt
🌺1/2 Stick of REAL Butter (4 tbsp)
🌺(2 cans) of 12 ounce of Evaporated Milk
🌺3/4 -- 1cup Cup Sugar ( or adjust to your liking)
🌺2 Tablespoon of Essence De Noyau)
1 Tablespoon pure vanilla extract
🌺 1 teaspoon fresh lime zest OR zest of 1/2 lime
*Add cubed plantains , 5 cups of water and Kay Manman Spice to your blender. Blend on high until pureed and smooth....2-3 minutes.
*NEXT :Pour pureed plantain blend into medium-sized pot on medium-high heat and let boil 3- 5 minutes while stirring constantly.( Mixture will thicken during boiling process, IT IS IMPORTANT TO CONTINUOUSLY STIR TO PREVENT BURNING)
*NEXT: Then add your star anise, cinnamon stick, salt and butter.. let boil/cook for an additional 2 - 3 minutes while stirring constantly.. (At this point that familiar smell of warm "Bannann Graje" cooking over the stove when you were a child should be coming back to you, doesn't it smell delicious and you haven't even added the milk, sugar and almond extract yet! Yum!)
*Then stir in your sugar, lime zest, Essence De Noyau extract, vanilla extract, graded nutmeg and 2 cans of evaporated milk. Lower heat to medium-low and allow to cook for an additional 4-5 minutes while stirring occasionally (Until you reach your desired thickness) ...Serve with warm sliced Haitian bread topped with a little bit of butter.
Enjoy! From my Caribbean kitchen to yours. Love, CCQ🌺❤ ( This dish is similar to Porridge served in Jamaica made with Harmony corn or cornmeal)
