Vanilla Bean "Kremas" Banana Pudding with Coconut Bread Crumble

Prep Time: 40 minutes

Serves 8-10

Level of difficulty:Easy

Let's start by making the delicious and buttery Konparèt Crumble.

First pre-heat your oven to 350 degrees to prepare to Bake/Crisp the Konparèt Crumble.

Konparèt Crumble:

You will need:

3 Konparèt / Coconut Biscuits

  • Zest of one lime

  • 1/2 tsp ground cinnamon

  • 1/3 cup Brown Sugar

  • 1/2 cup of melted butter

  • Pinch of salt

  • Take your coconut biscuits and crumble them in a large bowl leaving a few bits of large pea-sized pieces. Add lime zest, ground cinnamon, brown sugar, melted butter and pinch of salt. Mixed together, then spread evenly on baking sheet. Bake 16 to 21 minutes until golden brown. (8-10 minutes into baking carefully remove sheet pan from oven stir your crumble then put back into the oven to finish baking/Crisping. When done baking remove pan from oven and set aside on counter to cool. ( during the cooling process is when your crumble will become extra crispy)

  • After 16 minutes of baking begin to monitor your crisp, remove from oven once it's golden brown. Don't forget to turn your OVEN OFF.

  • VANILLA BEAN WHIPPED CREAM

  • ( while your crumbled is in the oven begin making your homemade whipped cream)

  • Ingredients:

  • 16 ounce carton of cold heavy whipping cream

  • 1 vanilla bean pod seeds

  • (if you cannot find vanilla bean add one teaspoon of pure vanilla extract)

  • 2 cups powdered sugar

To a large bowl add your heavy whipping cream, vanilla bean seeds and two cups of powdered sugar. Using your handheld mixer on level "1" or your KitchenAid Stand mixer on level "1"... whip ingredients together for 3 1/2 --5 minutes until stiff peaks have formed ( if you are using your KitchenAid mixer be sure to use your whisk attachment)

After 3 to 5 minutes of whisking in a circular motion you should have fresh homemade whipped cream, cover and refrigerate until ready to use. Please DO NOT overmix the fresh whipping cream, whipping it too much may turn it into butter, please only mix until stiff peaks have formed)

CHECK ON YOUR KONPARÈT CRISP!

KREMAS BANANA PUDDING

1 (8-ounce) package cream cheese, softened ( leave at room temperature for 30 minutes to soften)

  • 1 (14-ounce) can sweetened condensed milk

  • Zest of 1 lime

  • 1/2 cup of cleren (Grain Alcohol)

  • 1/2 Tablespoon Noyao Extract ( or 1/2 Teaspoon of pure almond extract. PLEASE READ CAREFULLY.. I SPECIFICALLY SAID "TABLESPOON" FOR THE NOYAO....AND.... "TEASPOON" FOR THE PURE ALMOND EXTRACT)... this is very important because the Haitian version has a slightly lighter taste then the pure almond extract, be very careful when taking these measurements do not confuse the tablespoon with the teaspoon or vice versa.

  • 1/3 cup of evaporated milk

  • 1 (3.4---5 ounce) BOX instant French Vanilla pudding. If you cannot specifically find the "French" Vanilla pudding you can substitute it with just regular Vanilla Pudding.

  • Mix all ingredients together in a large bowl with hand-held mixer on level 1 until smooth 2-4 minutes ( texture should be similar to cake batter) ... give it a taste, yummy isn't it!! Try not to eat all, we still have a few more steps to go until we're done .. with your greedy self!!

  • CHECK ON YOUR KONPARÈT CRISP!

  • DIRECTIONS.

Gently fold your Homemade Vanilla Bean Whipped Cream into Kremas Pudding Mixture (do not fold too vigorously, you do not want to whip out all of the fluffiness).... once you've Incorporated all of your fresh homemade vanilla bean whipped cream into your Kremas banana pudding mixture, set this aside in the refrigerator while you slice your bananas.... ( if you are serving this the next day toss your bananas in a little bit of lime juice to prevent them from turning brown, if you are serving the same day there's no need to toss your bananas in lime juice)

Let's Start layering:

I recommend you layer this delicious treat in a clear Bowl so that your guests can see the beauty of the crispy Konparèt Crumble layer and the silky Kremas Banana Pudding.

1st. layer the bottom with crumble.

2nd. Top crumble with dollops of Kremas Pudding, smoothen pudding flat with back of spoon

3rd. Layer evenly your banana slices

Repeat ....

.. the last 2 layers should be Kremas Pudding topped with the Konparèt crumble... lastly sprinkle the top lightly with fresh lime zest, and for added decoration top with a Star Anise.
